For Scott's first pick he went with the Lemon-Filled Coconut cake. This cake took a bit more work than the others I have done from this book so far. I did "cheat" and use pre shredded coconut. I did make the lemon custard and everything else from scratch though.
I am not a fan of lemon filled anything, but the cake it self tasted really good. And once again Wiigue really enjoyed it.
